So one night looking into the freezer, I found myself vegging out as my eyes scanned the frozen landscape . What to make…what to make I pondered. Freezer burnt hamburger patties. Nope, I don’t event know what circa they are from. A 3 foot frozen package of 25 chicken beasts from Costco? No, defrost will take two days and I forgot to pick up a 5 gallon bucket of BBQ sauce from Costco. My eyes met a lonely bag of mixed veggies and the brainstorming began. What can I make with a bag of vegetable medley? FRIED RICE!
With some leftover white rice and other basic ingredients I set forth to try to make some curry shrimped fried rice from scratch! Yum yum. Being a part-time stay at home Dad and a full-time wedding photographer it is always great to be able to quickly whip up a healthy dinner for the fam. I must say this dish has become my go to dish when it is “one of those days.” Hope you enjoy!

Prep time is about 15 mins.
- Cook 3 cups of rice. After completed place in fridge to cool the rice to be used later.
- Add 3/4 cup of vegetable oil and turn the stove on medium- high (about 6 or 7)
- Add 1/3 cup of dry minced onions. Cook until onions are golden brown.
- Add 25 chopped uncooked raw shrimp or 2 cubed uncooked chicken breasts.Cook until shrimp is red or until chicken is white.
- Add 1 tablespoon of ground black pepper.
- Add 1 tablespoon of curry powder. (I use yellow, but any will do)
- Add 1 cup of frozen vegetables. (A medley with corn, carrots and pees work best)
- Add the 3 cups of cooked cold rice. Mix thoroughly.
- Add 2 raw eggs and mix until rice looks less wet.
- Add 2 – 3 tablespoons of Soy Sauce to taste.
